A lot of men just want a "kill", the thrill of the chase may even be the major "enjoyment".

Some men/women just want the companionship that they lack from the current relationship, sex may not even be part of this.

Some women just crave the attention they get from suitor(s).
Some have high sex drive and do not get enough from their hbs/bfs.

Whether men or women, if they can't get it at home or not enough of it and badly need to satisfy a need, they will go out and look for a fix..
