The late night / last slot booking is a strategy employed by some cheongsters. Their logic is last slot maybe have chance to overstay (since no more customers), suggest off menu items (no more customers so ML no need to conserve energy), suggest supper / bring her out and even try their luck to sleep over.
These are all shared by MLs. While I don't deny maybe some will get lucky but believe the success rate is rather low. More likely is like what you mentioned, service will be compromised as ML is tired by then.
